Battered Seafood with Chilli Mango Sauce

Ingredients

(Serves 6 - 8)
2.5kg Austrimi Seafood Highlighter® c cups seasoned flour
1 cup shredded coconut
3 tbsp oil
3 tbsp dry sherry
1 cup beer
3 egg whites

Chilli Mango Sauce
50g butter
1/2bunch spring onions, washed and finely chopped
1 tbsp grated fresh ginger
1 cup mango chutney
2 tbsp soy sauce
1 tbsp sherry
1 tbsp sugar

Method

Toss seafood in half the seasoned flour. Combine other half with coconut, oil, sherry and beer. Beat egg whites until stiff and fold into batter. Dip floured seafood in batter immediately and deep fry in hot oil until golden. Drain. Melt butter and saute springs onions and ginger. Add remaining ingredients and simmer for 3-4 minutes. Puree until smooth and serve with deep fried seafood.
