Curried Filo Parcels

Ingredients

(Serves 10)
50g butter
45g flour
300ml milk
200ml fish stock
1 tbsp milk curry paste
Juice and rind of 2 lemons
500g red apples,
500g capsicum, seeded and finely diced
50g Austrimi Seafood Highlighter®
20 sheets filo pastry
200g butter
sesame seeds
extra zucchini
shaved parmesan

Method

Combine butter and flour to form a roux. Add in milk and fish stock and stir to form a smooth sauce. Add curry paste and mix well. Fold through lemon, apple, capsicum and highlighter®.
Reserve.
Lay a sheet of filo pastry out and brush generously with butter. Combine a second sheet on top. Place one tenth of seafood curry in the centre of pastry. Fold up to form a parcel and place fold side down on a greased baking sheet. Sprinkle with sesame seeds. Repeat until all pastry is used. Bake at 190 degrees celsius for 10-15 minutes. Garnish with zucchini strips to form a bow, and shaved parmesan. Serve with mixed vegetables.
