Curried Seafood Plait

Ingredients

(Serves 4-6)
30g butter
11/2 tbsp plain flour
1 1/2tbsp mild curry powder
3/4cup milk
150 g Austrimi Seafood Highlighter®, lightly separated with a fork.
Juice and rind of 1 lemon
1/4cup frozen peas
1/2capsicum, finely diced
1 sheet ready rolled puff pastry
1/2cup grated cheddar cheese
20g butter, melted
1/4cup sesame seeds

Method

Melt butter and add flour and curry powder. Cook 1-2 minutes then add milk. Stir to a smooth sauce and add in seafood, lemon, peas and capsicum. Reserve.
To form the plait
Lay pastry on a chopping board and visually divide into thirds. Do not cut. Cut 10 strips on left third from pastry edge to centre third edge. Repeat on right third. Place pastry on a greased oven tray and evenly spread filling down centre third. Top with cheese. Fold cut strips alternately over filling to form a plait. Brush with melted butter and sprinkle with sesame seeds. Bake at 180 degrees celsius for 30 minutes. Serve as a luncheon dish with a tossed salad.
