Highlighter® Salad with Pesto coulis
Ingredients

500g leg ham, cubed
800g Austrimi Seafood Highlighter®
10 Roma tomatoes, sliced lengthways
200g black olives, seeded and roughly chopped
300g yellow baby squash, blanched and quartered
300g pecan nuts, lightly toasted
Mixed greens (mustard cress, mignonette, curly endive etc ) washed.

Coulis
2 bunches fresh basil
3 cloves garlic, peeled
200 ml balsamic vinegar
500 ml virgin olive oil

Method

Toss the first six salad ingredients together. Place on a bed of mixed greens covering two thirds of the plate. Puree coulis ingredients until smooth. Sauce remaining one third of each place. Serve immediately.
