Savoury Seafood Ramekins
Ingredients

(Serves 10)
500g Austrimi Seafoods Highlighter®
400g canned sweet corn kernels, drained
300ml rich cream
2 tbsp mild madras curry powder
crushed black pepper
Juice and rind of 1 lemon
150g stale herb bread, crumbed
200g grated pecorino cheese

Method

Combine seafood and sweet corn and divide between 10 ovenproof ramekins. Season cream with curry powder, pepper and lemon and pour over seafood mixture. Bake at 190 degrees celsius for 15-20 minutes. Serve immediately with melba toast and lemon wedges.
