Seafood Noodle Salad
Ingredients

(Serves 4)
Salad
1 1/2cups cooked noodles
50 g sliced mushrooms
1/2cup cooked peas
1 red capsicum, seeded and diced
2 celery sticks, sliced
2 mandarins, peeled and segmented
200 g Austrimi seafood Highlighter®
1/2cup blanched almonds, lightly toasted

Dressing
1 x 200g tub natural yoghurt
1/4cup orange juice
1 tbsp glace ginger, finely chopped
1 tbsp sweet sherry

Method

Combine all salad ingredients in a large serving bowl. Whisk together dressing ingredients and pour over salad. Toss well to coat all pasta. Serve.
